This quick and easy mince recipe is a great crowd-pleaser. If you want something that is tasty that you can make quickly this recipe is ideal.

Minced beef is one of those things that there are a lot of different recipes for. In our house my son and I love pasta. We would eat spaghetti bolognese until it came out of our ears. Strangely my dog is a great spaghetti lover. He does a fabulous impression of that scene in Lady and the Tramp where the two dogs both eat the same strand of spaghetti. It is funny to watch him. If you dangle a piece of spaghetti in front of him he sucks it down in double quick time. My husband is much more traditional and prefers mince and potatoes.

If you want to make a cheap and easy recipe mince is always good to have in. The family always love this recipe. You can serve it with either pasta or potatoes. History of the quick and easy mince recipe

Every family has recipes that have been given to them by friends and family. My mum got this recipe from our elderly neighbour when we were growing up. It made a regular appearance on the menu and always went down well. I made the recipe a lot when I was a student, having scribbled it down in the back of a cookery book. These days I still make the recipe for my family.

While that neighbour has long since died the recipe still brings back fond memories of my childhood. We would knock on the door to see if she needed any shopping. She would slip us sweets when we did. Whilst playing on the street we would always wave. It is lovely that a recipe can immortalise a person.

How to make this simple minced beef recipe

This recipe is really simple to make. First peel and chop an onion and carrot. Chop the carrot into small cubes so that it cooks evenly in the pan. Slice about six mushrooms. After doing this heat some oil in a large pan and gently fry the onions, carrot and mushrooms. Once these are soft add the mince.

To get the best flavour from the mince you need to brown it. Keep stirring the mince so it doesn’t stick to the pan and so it browns evenly. Once it is brownadd a tin of condensed tomato soup and a tin of baked beans. If you don’t have condensed tomato soup a tin of ordinary soup will work. It just does not have quite as much flavour. Simmer for around twenty minutes until the mince is ready.

You can serve the mince with spaghetti, rice or potatoes, it is up to you. It works well with all three. A side salad is nice as well.

This is a delicious tomato flavoured mince that goes well with spaghetti, rice or potatoes

Ingredients

  • One onion
  • About six mushrooms
  • Two carrots
  • 500 g minced beef
  • A tin of tomato soup condensed is best but normal soup will work as well
  • A tin of baked beans

Instructions

  • Add some cooking oil into a pan and heat up.

  • Chop the onions, mushrooms and carrots into small pieces put in pan.

  • When the onions, carrots and mushrooms are soft add the mince to the pan and brown.

  • Add the tomato soup and the baked beans to the pan and stir

  • Simmer gently on a low heat for about 20 minutes until the mince is cooked.

Freezing the recipe

This recipe is great for freezing so it is worth making double and putting some into the freezer for another day. That way you will always have a quick meal on hand. Just put it into a freezer bag or tupperware box once cool and place in the freezer. Once you defrost the meat it can be quickly warmed up for a super speedy meal.

To defrost the meat it is best to leave it in the fridge overnight. This will allow it to defrost slowly and evenly. If you forget you can always use the defrost setting on the microwave to defrost it quickly. I have also been known to defrost the meat in the pan. If you do this you need to ensure that it is all defrosted and warm before you serve.
