Instant Pot Mushroom Barley Soup Recipe Directions:
Place all of your onion, carrots, celery, mushrooms and garlic into theinstantpot.
Add in the broth, barley and water and mix it together really well. Next, stir in seasonings and make sure that it is completely mixed in.
You do not want to end up with clumps of seasoning floating around in your finished product.
Place the cover onto theinstantpotand seal the quick release valve. Set theinstantpotto manual, high pressure for 25 minutes.
When the cooking cycle is finished, quick release the pressure valve and open the lid, spoon out the soup and serve it up! YUM!

Do you cook barley before adding it to soup? Your beef barley soup will simmer long enough to cook the barley. There is no need for the additional step of cooking the barley first. The barley takes about 30 minutes to cook completely.
Choose your barley according to the dishes you wish to make. For soups, stews and slow-cooked dishes, both pot and pearl barley will work. However, you should use pearl barley in speedier dishes like risotto or salad.
Can you overcook soup in the Instant Pot? When it comes to overcooking the soup, that's not likely to happen during the pressure cooking process (before the noodles are added in). You can, however, overcook the noodles, so be sure to taste test them for doneness after they've simmered for about 5 minutes.
As barley is a starch the best you can do is dilute it, or thin it out a bit. You may need to add a fair bit of broth and more of your vegetal ingredients. Possibly to the point of doubling your recipe. It will depend on when you find the taste and texture to have gotten back to acceptable levels.
Do you have to soak barley before cooking? Pearl barley does not need to be soaked prior to cooking because it cooks quickly. Hulled barley benefits from soaking in water for a few hours before cooking. However, you should still budget more time for the hulled grain to cook (about 35 to 40 minutes).
Barley is high in fiber, which is necessary for proper digestion. Studies have shown that eating barley can reduce constipation, improve symptoms of certain bowel conditions and increase the number of beneficial gut bacteria.
Therefore, it should come as no surprise that regularly adding barley to your diet may lower your risk of heart disease. That's because barley may lower certain risk factors — in addition to reducing “bad” LDL cholesterol levels, barley's soluble fiber may bring blood pressure levels down ( 25 ).
Overcooked barley will become mushy, while undercooked may have a thicker and chewier texture. You can make barley as a side dish, but you can also cook it into your food. Feel free to cook our pearled barley in your favorite soup or stew, but be mindful that it will absorb a lot of liquid.
Next, it's time to cook the chicken and create a super flavorful broth! To do this, close the lid on your Instant Pot and set the valve to the sealing positing. Then set the IP to the Soup setting and set the timer to 7 minutes.
Close and lock the Instant Pot® lid, making sure the steam release handle is turned to Sealing. Press Soup/Broth and set the time to 15 Minutes. When done cooking, let the pot release steam naturally for 4 Minutes. Then press Cancel and turn the steam release handle to Venting.

Hulled barley is made up of grains that have only had their outer husks removed, which are indigestible. Hulled barley has a darker and slightly tan color. Pearl barley grains have had both their outer husks and bran layers removed. Additionally, pearl barley is typically lighter in color compared to hulled barley.
Since the barley can absorb too much of the liquid when made ahead, and get mushy, I find it best to cook the barley separately. Make as directed, just omitting the barley.
