Chickpea salad ingredients:
- 2 (15.5 oz) cans chickpeas, rinsed and drained
- 1 cup flat-leaf parsley. chopped
- 1 cup English cucumber, quartered and sliced
- 2 cups grape tomatoes, quartered
- 2./3 cup bell pepper, diced
- 3 tablespoons olive oil
- 2 cloves garlic, minced or pressed
- 2 tablespoons lemon juice
- Zest of 1 lemon
- ¼ teaspoon cumin
- ½ teaspoon kosher salt
- ½ teaspoon fresh ground black pepper
